What to do if you think you have a fructan intolerance. So, you suspect that you have a fructan intolerance. Now what? The only way to nail down a fructan intolerance is to go through a very specific elimination diet known as the low-FODMAP diet.
“You actually have to go through the list of each type of FODMAP and start eliminating foods that include them,” Czerwony explains. “If you find that you’re particularly sensitive to something, you’ll begin to slowly add certain foods back in to see like what your tolerance is — or if you can’t tolerate them at all.”
Because that’s the other thing: You can be levels of fructan intolerant. You could discover that you’re able to eat a little bit of some foods that contain fructans but that a super-oniony meal is too much for you to handle. Or maybe it all upsets your stomach. But you can’t know for sure until you’ve done the low-FODMAP diet.
“There may be foods that you end up totally eliminating from your diet, or you may find that you have some threshold of tolerance,” Czerwony notes.
What enzyme breaks down onions?

Which enzyme breaks down garlic?
S-allyl-L-cysteine sulfoxide (alliin) accounts for approximately 80% of cysteine sulfoxides in garlic ( Figure 1 ). When raw garlic cloves are crushed, chopped, or chewed, an enzyme known as alliinase is released. Alliinase catalyzes the formation of sulfenic acids from L-cysteine sulfoxides ( Figure 2 ). Sulfenic acids spontaneously react with each other to form unstable compounds called thiosulfinates. In the case of alliin, the resulting sulfenic acids react with each other to form a thiosulfinate known as allicin (half-life in crushed garlic at 23°C is 2. 5 days). The formation of thiosulfinates is very rapid and has been found to be complete within 10 to 60 seconds of crushing garlic. Allicin breaks down in vitro to form a variety of fat-soluble organosulfur compounds ( Figure 2 ), including diallyl trisulfide (DATS), diallyl disulfide (DADS), and diallyl sulfide (DAS), or in the presence of oil or organic solvents, ajoene and vinyldithiins. In vivo, allicin can react with glutathione and L-cysteine to produce S-allylmercaptoglutathione (SAMG) and S-allylmercaptocysteine (SAMC), respectively ( Figure 2 ).
Crushing garlic does not change its γ-glutamyl-L-cysteine peptide content. γ-Glutamyl-L-cysteine peptides include an array of water-soluble dipeptides, including γ-glutamyl-S-allyl-L-cysteine, γ-glutamylmethylcysteine, and γ-glutamylpropylcysteine (see Figure 1 ). Water-soluble organosulfur compounds, such as S-allylcysteine and SAMC ( Figure 3 ), are formed from γ-glutamyl-S-allyl-L-cysteine during long-term incubation of crushed garlic in aqueous solutions, as in the manufacture of aged garlic extracts (see Sources ).
Although little is known about their bioavailability and biological activities, non-sulfur garlic phytochemicals, including flavonoids, steroid saponins, organoselenium compounds, and allixin, likely work in synergy with organosulfur compounds.
How do you remove fructans from onions?
Onion and garlic both contain the oligosaccharide fructans. Fructans are water soluble – that means if you soak them in water, the fructans move out of the onion/garlic and into the surrounding water.
Why am I so sensitive to fructans?
The causes of fructan intolerance are not well understood. Some people seem to have less capacity than others to digest and absorb fructans into their bloodstream, and others experience stronger symptoms than others as a result of the fermenting of the unabsorbed sugars.

Does fructan intolerance sufferers and coeliac disease have a connection, other than issues with wheat? My mother and sister both have issues with onion and garlic – for my sister it triggers IBS and my mother had ulcerative colitis until she cut these foods out. Both have no problems eating wheat. My brother and myself are coeliac so we cannot eat wheat but have no problems with garlic or onion. I know coeliac disease is partly due to genetics and I have inherited the varient type of both alleles of the HLA-DQ2 gene so my mother would have at least one varient type herself and my sister has a good chance of carrying a varient. Has this gene been associated with fructan issues? Are there any other associations, eg would issues with fructan breakdown alter the villi or mucousal lining of the gut?
