Cytosolic Cl − must cause conformational changes in proteins, such as enzymes, to function as intracellular signals. Enzymes are essential catalysts that increase the rate of chemical reactions within cells. Most biological reactions are catalyzed by proteins, which can lower activation energy by binding substrates individually and bringing them together under optimal conditions.

Cations, such as Na+, K+, Ca2+, Mg 2+, and H+, contribute to cellular functions such as generation of action. Chloride-dependent α-amylases, angiotensin-converting enzyme (ACE), and photosystem II (PSII) are activated by bound chloride, which contains a positively charged Arg or Lys residue. Enzymes such as Candida antarctica lipase B (CALB), Candida rugosa lipase (CRL), Cytochrome C (Cyt C), Thermolysin, lysozyme, and others have been demonstrated to be effective in reducing the activity of antioxidant enzymes.

Although NaCl can reduce the activity of antioxidant enzymes, it also stabilizes the enzyme at pH 9.0, more significant when the concentration of the salt is increased. Enzymes are biological catalysts that speed up biochemical reactions in living organisms and can be extracted from cells. In the presence of specific enzymes, procarriers 3 and 4 exhibit increased activities of transporting chloride ions across a POPC.

The effects of poly(γ-glutamic acid) (γPGA), a water-soluble poly(amino acid), on enzyme activity and stability have been investigated. Chloride over time resulted in progressive enzyme inhibition, possibly due to high concentration of mercuric chloride. Different pretreatments were effective at removing hemicellulose, with ferric chloride pretreatment (FCP) giving the highest results.

Addition of sodium chloride salt above 50 mM resulted in droplet disassembly, which confirmed that coacervation is a key property of enzymes.

How does HCl affect enzyme activity?

The HCl in the stomach denatures salivary amylase and other proteins by breaking down the structure and, thus, the function of it. HCl also converts pepsinogen to the active enzyme pepsin. Pepsin is a protease, meaning that it cleaves bonds in proteins. It breaks down the proteins in food into individual peptides (shorter segments of amino acids). The other enzyme that is active in the stomach is gastric lipase. This enzyme preferentially cleaves the sn-3 position of triglycerides to produce 1, 2-diglyceride and a free fatty acid, as shown below 4. It is responsible for up to 20% of triglyceride digestion 3.

The chyme will then leave the stomach and enter the small intestine via the pyloric sphincter (shown below).
