Microwaves do not damage enzymes in food, as they are not alive and cannot be “killed” at all. However, they can affect enzymes in foods by causing water molecules to vibrate, producing heat that cooks it, leading to the denaturation of some enzymes. To ensure the integrity of enzymes in food, remove the husks and silks, trim the ends, and rinse the corn. Overcooking can destroy much of the nutritive value of a food and create mutagenic and carcinogenic substances.
To cook corn quickly, place the rimmed cobs on a microwave-safe plate and heat for 2 to 4 minutes. Shake the corn after cooking, as the steam created during microwave use can deactivate allinase, a nutrient thought to have cancer-fighting effects. Cooking broccoli in the microwave leads to 97 loss of antioxidants.
The best cooking method for retaining nutrients is one that cooks quickly, heats food for the shortest amount of time, and uses as little liquid as possible. Microwaving meets these guidelines, with the ear of corn being cooked on high for 3 minutes. After cooling and shucking, place the rinsed kernels in a microwave-safe bowl and add water to cover the bottom.
Microwave heating causes intense movement of polar molecules, breaking the cellular structure of the food matrix and allowing digestion. Microwave-assisted alkalic salt pretreatments (Na3PO412H2O, Na2CO3 and CH3COONa) can improve enzyme activities and quality parameters in wheat germ.
Microwave cooking is actually one of the least likely forms of cooking to damage nutrients, as the longer food cooks, the more nutrients tend to be retained. Cook corn in the microwave until hot and cooked through, then remove from the microwave and let rest for 2 minutes.

Does microwaving kill enzymes?
The Bottom Line. Microwaving is a convenient and safe way to cook food, as long as you use the right vessels and follow the manufacturer’s directions. When it comes to whether it breaks down nutrients, it is true that some nutrients may be degraded when using any heating method. However, since microwaving takes a shorter time to cook and less water, it seems to result in less nutrient breakdown compared to other methods.
Using a microwave is generally considered safe and not unhealthy. The World Health Organization states that when used according to manufacturers’ instructions, microwave ovens are reliable and safe for heating and cooking a variety of foods. The type of microwaves used in kitchen appliances does not make the food radioactive or diminish its nutritional value significantly.
Standing in front of a microwave while in operation is generally considered safe due to the stringent safety standards that microwave ovens must adhere to. These appliances are designed with shielding to prevent microwaves from leaking out, keeping exposure well below levels that could harm human health.
Does microwave kill nutrients in vegetables?
In fact, microwaving is actually a good way to minimize the loss of nutrients! The nutrients of most concern when microwaving are the water soluble vitamins: vitamin C and the B vitamins. These vitamins are lost more easily during the cooking process, because they easily move into the cooking water. The fat-soluble vitamins ( A, D, E, and K) are not as easily lost in the water during the cooking process.
A review in the Journal of Food Composition and Analysis found higher retention values of water-soluble vitamins in foods that were prepared in the microwave, steamed, or stir-fried. Vitamin C in spinach and green beans cooked in the microwave had a mean retention of up to 79% when compared to 66% retained when boiled. Another study cited in the article found that retention of vitamin C was the highest in fresh broccoli, cauliflower, potatoes, frozen corn, and peas cooked by microwave steaming, followed by microwave-boiling, stovetop steaming, and stovetop boiling. Folate, vitamin C, retinol (a from of vitamin A), and thiamin (B1) seem to be most affected by the cooking process.*
The difference in nutrient quality caused by cooking (including microwaving) is very minimal ! The most important thing is that you are eating your fruits and veggies ! No matter how you prepare them, or what form— fresh, frozen, canned, dried, or 100% juice —you prefer, consuming fruits and vegetables is much more beneficial to you than not consuming them at all!
Are microwaves banned in Russia?
A study of Internet sources supports the conclusion that false rumors about microwave ovens were banned in the Soviet Union in 1976 and removed in 1987 under perestroika and Gorbachev. This is false, as per Soviet ads, ovens were being sold around 1980 and Raytheon purchased two in 1982. Pro-microwave websites at most say that ovens may have been banned in the USSR but more often cast doubt on or deny the rumor. One site debunks the rumor, stating that the origin of the rumor is a “William P. Kopp” of Oregon, who was associated with various entities, including the Atlantic Raising Educational Center and Forensic Research. Kopp was the author of a website, Omega News, that alleged that humans, animals, and plants within a 500 meter radius of the equipment in operation suffer a long-term cumulative loss of vital energies. Brian Dunning of skeptoid. com presented further rebuttals of the rumor in 2007.
False allegations about microwaves abound and proliferate in today’s Internet, and even historical ones can gain some credibility due to their repetitive nature. The only sure defense against such false history is diligence of reputable involved professionals, who present corrections and the truth in publications and the Internet. Professional societies like the International Microwave Power Institute (impi. org) and the IEEE play key roles in spreading the truth to society.
What is the negative effect of a microwave?
While microwave oven radiation doesn’t cause cancer, it can cause painful burns if you’re exposed to them. Microwave radiation can heat body tissue the same way it heats your food. However, these burns are only caused when you’re exposed to high levels of microwave radiation.
Microwaves, in addition to radio waves and visible light, are all non-ionizing radiation. The only non-ionizing radiation that causes cancer is UV light. So overall, microwave ovens are safe to use and will not cause cancer or any other adverse health conditions.
If you’re worried about your microwave leaking radiation or being too old, you can replace it with a newer one. Microwave ovens typically last about ten years, so if you’ve had yours longer, it might be time to upgrade. If you have an older microwave you want to hold on to, it might be best not to remain in the same room while it’s cooking. This is just to protect you from any potential radiation leakage.

Can enzymes be destroyed by heat?
- Enzymes are mostly proteins that catalyze various biochemical reactions. The catalytic reaction occurs through a specific region (active site) where the substrate bind.
- Enzymes show the highest activity at a specific temperature called ‘optimum temperature’.
- High heat destroys enzymes. Enzymes are protein molecules that get denatured at high temperatures.
- High heat breaks hydrogen and ionic bonds leading to disruption in enzyme shape. The enzyme loses its activity and can no longer bind to the substrate.
- Certain enzymes synthesized by bacteria and archaea that grow exposed to high temperatures are thermostable. They are active even at temperatures above 80°C and are called hyper thermophilic enzymes. For example- thermophilic lipase is active at a high temperature.

Does microwave destroy antioxidants?
According to two reviews, microwaving does not reduce nutrient value more than other cooking methods .
An older study on 20 different vegetables noted that microwaving and baking preserved antioxidants the best, while pressure cooking and boiling did the worst .
However, one older study found that just 1 minute of microwaving destroyed some of the cancer-fighting compounds in garlic, while this took 45 minutes in a conventional oven .
However, a recent study showed that mild microwaving actually increased the levels of the anticarcinogenic compound sulforaphane in broccoli .
What temperature kills enzymes in food?
Enzymes are heat sensitive and deactivate easily when exposed to high temperatures. In fact, nearly all enzymes are deactivated at temperatures over 117°F (47°C) ( 2, 3 ). This is one of the primary arguments in favor of raw-food diets.
Does heat destroy digestive enzymes?
Literature shows that high heat can destroy digestive enzymes and most digestive enzymes show optimum temperature from 30 to 50. Protease of kiwifruit, papaya, zinger, and pineapple activity temperature was 40°C to 70°Cand the optimum temperature was 50ºC.
📹 how to FIX crystallized honey (decrystallize) without damaging enzymes
… no-no is don’t go above 140 degrees if you do you’re going to denature all the enzymes that make honey so good for you 104 or …
Coming here to say that 3 years later this still works!! I heated water to 140 F with an electric kettle and filled the crock pot and kept it on warm just as listed. The temperature did drop to 130 F since the lid was off but the temp. maintained itself steady for the 3 hours I had the bottles in the bath. My bottles were almost empty and the honey hat settled to one side. They floated so I had to rubber band them together and put a small handled heavier pot on top of them to avoid them from topping over and floating. I noticed that the seal on two of them wasn’t as snug as before and water could easily enter. I would advise not letting the bottles lay in the water to avoid water leaking into the honey. Also, the metal pot creates a little heat cave and honey that had hardened on top melted to the bottom. I emptied the honey in a jar that I could easily scoop with a spoon. I remember seeing another article that stated that honey would re-crystallize again and to avoid it to put a little of corn syrup in the honey, but unless you have a full jar of unused honey, I don’t think it’s worth the effort. Great instructions and easy to follow. I can’t believe I threw perfectly good honey away all those years ago that I could’ve solved with a crock pot!
My first jar crystalyzed 1/4of the bottle. I cut the bottle open lenghwise and put it out for the bees. I dont know where they all come from, but they were going to town on it. Put sticks here and there so they wouldnt drown in the stuff. It was really neat to watch them work it down to nothing but a couple crystals.
anyone perusal should actually cut open their bottles and put the honey into jars or other containers that aren’t plastic for future easy recrystallization (i personally buy ketchup, or pickles or w.e. else you want, +500g jars instead of bottles for exact this reason, do it 1-2 times and you have forever lasting container for stuff like this especially considering you dont eat 200g honey in a sitting). Heating plastic with things you plan to consume inside is a very very bad idea
